In preparation for my Italian class tomorrow I decided to copy the menu from my favorite restaurant on the planet Earth, Aeolia’s, in Costozza di Longare, just outside of Vicenza. The chef, Luca, has an ongoing love affair with Baccala, or salted cod, which i tend to view more as cat food. On his menu today i saw one platter described as Baccala Sacro e Profano, or salted Cod, Sacred and Profane. Well, it’s ALL Profano to me! Smile. Or as Luca says whenever I enter, NO Baccala for YOU!
