The risotto can be done with all the seasonal vegetables, but also meat, fish and cheese
Carnaroli Rice from the Abbadesse
Onion and Garlic
Chicken or Vegetable Broth
Butter, Salt and Pepper to taste
White Wine, Brandy
Brown the onion and garlic. Toast the rice, sprinkle with brandy and white wine, cook by adding the boiling broth a little ‘at a time.
Meanwhile, cut the onion into slices and let’s fry in a pan with half the butter, just begin to wilt join the sugar and let caramelize over high heat for 2-3 minutes. In the last minutes of cooking rice add the caramelized onions. When the rice is ready, we remove the pan from the heat, add the remaining butter, Parmesan, gorgonzola and ‘mantecare’.
